Savory French Dip Tortilla Melt Roll-Ups are crispy golden tortillas stuffed with juicy shredded beef and melty cheese, perfect for dipping in rich au jus.

- 2 cups shredded roast beef
- 1 ½ cups shredded mozzarella or provolone
- 4 large flour tortillas
- 1 cup beef au jus (for dipping)
- 2 tbsp butter
- 1 tsp garlic powder
- 1 tbsp chopped fresh parsley
- Salt & black pepper to taste
Instructions
- Warm the shredded roast beef in a skillet over medium heat until heated through. Season with garlic powder and pepper.
- Lay tortillas flat and evenly distribute beef across the center of each.
- Sprinkle generous mozzarella or provolone over the beef.
- Roll tortillas tightly into logs, folding in sides slightly as you roll.
- Melt butter in skillet and place roll-ups seam-side down. Cook until golden brown and crispy on all sides, about 2–3 minutes per side.
- Remove and slice diagonally. Garnish with parsley.
- Serve hot with warm au jus for dipping.
Notes
- For extra flavor, consider adding sautéed onions or peppers to the filling.
- These roll-ups can be made ahead of time and reheated in the oven.
