Ingredients
- Carrots (halved lengthwise)
- Cooked green or brown lentils
- Hummus
- Lemon juice
- Olive oil

- Salt & black pepper
- Garlic (optional)
- Fresh parsley or basil
- Chili flakes (optional)
Instructions
- Toss carrots with olive oil, cumin, smoked paprika, salt, and pepper.
- Roast carrots until tender and caramelized, turning once.
- Warm lentils gently and season with olive oil, lemon juice, salt, and pepper.
- Spread hummus generously on a serving plate.
- Spoon lentils over the hummus and top with roasted carrots.
- Finish with fresh herbs and chili flakes if desired.

- For extra flavor, add garlic to the lentils.
