Ingredients
- Shelf-stable potato gnocchi
- White beans (cannellini or great northern)
- Sun-dried tomatoes (oil-packed)
- Olive oil
- Garlic, minced
- Red pepper flakes
- Fresh basil or parsley, chopped
- Salt & black pepper
- Vegan butter or extra olive oil (optional)
- Grated Parmesan or dairy-free alternative (optional)
Instructions
- Boil gnocchi according to package directions; drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Sauté garlic and red pepper flakes until fragrant.
- Add sun-dried tomatoes and white beans; warm through gently.
- Add cooked gnocchi and toss to coat in the sauce.
- Finish with herbs, salt, pepper, and optional butter or cheese. Serve warm.
