Ingredients
- Ground turkey & Italian sausage (for meatballs)
- Cannellini beans
- Chicken broth
- Kale or spinach
- Onion (diced)
- Carrots (sliced)
- Garlic (minced)
- Olive oil
- Egg (for meatballs)
- Breadcrumbs or almond flour
- Parmesan cheese
- Italian seasoning
- Salt & black pepper
- Lemon zest (optional)
- Fresh dill or parsley
Instructions
- Mix ground meats with egg, breadcrumbs, Parmesan, seasoning, salt, and pepper; roll into small meatballs.
- Brown meatballs in olive oil until golden; remove and set aside.
- In the same pot, sauté onion and carrots until softened.
- Add garlic and Italian seasoning; cook until fragrant.
- Stir in beans and broth; blend one cup of beans with broth and return for creaminess.
- Add meatballs and simmer for 20 minutes until cooked through.
- Stir in greens to wilt, finish with lemon zest and fresh herbs.
Notes
- For a gluten-free option, use almond flour instead of breadcrumbs.
- Feel free to substitute spinach for kale based on preference.
