Description

A flavorful and comforting stew featuring tender pork simmered in coconut milk with sweet peppers and island spices.


Ingredients

Scale
  • 2 lbs Pork shoulder
  • 1 can Coconut milk
  • 2 Sweet potatoes, diced
  • 1 Scotch bonnet pepper, whole
  • 2 tbsp Olive oil or coconut oil
  • 1 Yellow onion, chopped
  • 4 cloves Garlic, minced
  • 1 Green bell pepper, chopped
  • 1 Red bell pepper, chopped
  • 2 Carrots, sliced
  • 2 tbsp Tomato paste
  • 4 cups Chicken or vegetable broth
  • 1 tsp Fresh thyme
  • 1 tsp Ground allspice
  • 1 tsp Smoked paprika
  • Salt & freshly ground black pepper to taste
  • Fresh cilantro or parsley for garnish
  • Lime for finishing

Instructions

  1. Heat oil in a heavy pot; brown pork chunks well on all sides and set aside.
  2. Sauté onion, garlic, and bell peppers until softened and fragrant.
  3. Stir in tomato paste, allspice, and smoked paprika; cook until deepened in color.
  4. Return pork to the pot with carrots, sweet potatoes, thyme, and Scotch bonnet.
  5. Pour in broth and coconut milk; bring to a gentle simmer.
  6. Cover and cook low until pork is very tender and sauce is rich.
  7. Finish with fresh herbs, lime juice, and adjust seasoning before serving.

Notes

  • Adjust the amount of Scotch bonnet pepper based on your heat preference.
  • Serve with rice or bread to soak up the delicious sauce.
  • This stew can be made a day ahead for even better flavor.
