A flavorful and comforting stew featuring tender pork simmered in coconut milk with sweet peppers and island spices.

- 2 lbs Pork shoulder
- 1 can Coconut milk
- 2 Sweet potatoes, diced
- 1 Scotch bonnet pepper, whole
- 2 tbsp Olive oil or coconut oil
- 1 Yellow onion, chopped
- 4 cloves Garlic, minced
- 1 Green bell pepper, chopped
- 1 Red bell pepper, chopped
- 2 Carrots, sliced
- 2 tbsp Tomato paste
- 4 cups Chicken or vegetable broth
- 1 tsp Fresh thyme
- 1 tsp Ground allspice
- 1 tsp Smoked paprika
- Salt & freshly ground black pepper to taste
- Fresh cilantro or parsley for garnish
- Lime for finishing
Instructions
- Heat oil in a heavy pot; brown pork chunks well on all sides and set aside.
- Sauté onion, garlic, and bell peppers until softened and fragrant.
- Stir in tomato paste, allspice, and smoked paprika; cook until deepened in color.
- Return pork to the pot with carrots, sweet potatoes, thyme, and Scotch bonnet.
- Pour in broth and coconut milk; bring to a gentle simmer.
- Cover and cook low until pork is very tender and sauce is rich.
- Finish with fresh herbs, lime juice, and adjust seasoning before serving.
Notes
- Adjust the amount of Scotch bonnet pepper based on your heat preference.
- Serve with rice or bread to soak up the delicious sauce.
- This stew can be made a day ahead for even better flavor.
