Ingredients
- Sweet corn kernels
- Fresh cucumbers
- Sour cream
- Cotija cheese
- Red onion, finely diced
- Jalapeño, minced (optional)
- Lime juice
- Olive oil or mayo
- Chili powder
- Garlic powder
- Fresh cilantro
- Salt & black pepper
Instructions
- Cook corn if needed, then cool completely.
- Slice cucumbers into thick rounds or half-moons.
- In a bowl, whisk sour cream, olive oil (or mayo), lime juice, chili powder, garlic powder, salt, and pepper.
- Add corn, cucumbers, red onion, and jalapeño to the bowl.
- Toss gently until everything is evenly coated.
- Fold in cotija cheese and chopped cilantro.
- Chill 10 minutes before serving for best flavor.
