- 10 sheets phyllo dough
- 10 oz frozen spinach, thawed and drained
- 1 cup crumbled feta cheese
- 3 tbsp butter, melted
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 eggs, lightly beaten
- 1 tbsp olive oil
- Salt & pepper to taste
- 1 tbsp sesame or nigella seeds for topping
Instructions
- Preheat oven to 375°F and line a baking sheet with parchment paper.
- In a skillet, sauté onion and garlic in olive oil until soft. Add spinach and cook off excess moisture. Cool slightly.
- Stir in feta cheese, eggs, salt, and pepper to form the filling.
- Brush one phyllo sheet with butter, add a spoonful of filling along one edge, and roll tightly into a log.
- Coil the log into a spiral on the pan; continue adding filled rolls until the spiral is complete.
- Brush the top with butter and sprinkle sesame or nigella seeds.
- Bake 35–40 minutes until crispy and golden. Cool slightly before slicing.
Notes
- Ensure spinach is well-drained to avoid a soggy filling.
- Phyllo dough can dry out quickly; keep unused sheets covered with a damp cloth.
- Can be served warm or at room temperature.
