Description

Crispy golden phyllo dough coiled with a creamy spinach and feta filling, topped with sesame and nigella seeds.

Ingredients

Scale
  • 10 sheets phyllo dough
  • 10 oz frozen spinach, thawed and drained
  • 1 cup crumbled feta cheese
  • 3 tbsp butter, melted
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 eggs, lightly beaten
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1 tbsp sesame or nigella seeds for topping

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. In a skillet, sauté onion and garlic in olive oil until soft. Add spinach and cook off excess moisture. Cool slightly.
  3. Stir in feta cheese, eggs, salt, and pepper to form the filling.
  4. Brush one phyllo sheet with butter, add a spoonful of filling along one edge, and roll tightly into a log.
  5. Coil the log into a spiral on the pan; continue adding filled rolls until the spiral is complete.
  6. Brush the top with butter and sprinkle sesame or nigella seeds.
  7. Bake 35–40 minutes until crispy and golden. Cool slightly before slicing.

Notes

  • Ensure spinach is well-drained to avoid a soggy filling.
  • Phyllo dough can dry out quickly; keep unused sheets covered with a damp cloth.
  • Can be served warm or at room temperature.
