Description

A rustic, smoky Spanish-style soup with tender potatoes and rich chorizo in a paprika-kissed broth.


Ingredients

  • Spanish chorizo (sliced)
  • Yukon Gold potatoes (chunked)
  • Smoked paprika
  • Chicken broth
  • Onion
  • Garlic
  • Celery
  • Red bell pepper
  • Olive oil
  • Bay leaf
  • Salt & black pepper
  • Fresh parsley (for garnish)
  • Chili flakes (optional)

Instructions

  1. Heat olive oil in a pot and brown chorizo until it releases its oils; remove and set aside.
  2. In the same pot, sauté onion, celery, and red pepper until softened.
  3. Add garlic and smoked paprika; stir briefly until fragrant.
  4. Add potatoes, bay leaf, and chicken broth; bring to a simmer.
  5. Cook until potatoes are tender, about 20 minutes.
  6. Return chorizo to the pot and simmer 5 more minutes.
  7. Season to taste, garnish with parsley, and serve hot.

Notes

  • Chili flakes can be added for extra heat.
  • Fresh parsley adds a nice touch of color and flavor.
