Ingredients
- Spanish chorizo (sliced)
- Yukon Gold potatoes (chunked)
- Smoked paprika
- Chicken broth
- Onion
- Garlic
- Celery
- Red bell pepper
- Olive oil
- Bay leaf
- Salt & black pepper
- Fresh parsley (for garnish)
- Chili flakes (optional)
Instructions
- Heat olive oil in a pot and brown chorizo until it releases its oils; remove and set aside.
- In the same pot, sauté onion, celery, and red pepper until softened.
- Add garlic and smoked paprika; stir briefly until fragrant.
- Add potatoes, bay leaf, and chicken broth; bring to a simmer.
- Cook until potatoes are tender, about 20 minutes.
- Return chorizo to the pot and simmer 5 more minutes.
- Season to taste, garnish with parsley, and serve hot.
Notes
- Chili flakes can be added for extra heat.
- Fresh parsley adds a nice touch of color and flavor.
