Description
Deliciously soft and chewy cookies inspired by the Grinch, perfect for the holiday season.
Ingredients
Scale
- 1 box vanilla cake mix (approx. 425 g)
- 2 large eggs
- 1/3 cup vegetable oil
- 1 tsp vanilla extract
- Green gel food coloring (Grinch shade!)
- 1/2 cup powdered sugar (for rolling)
- Green sanding sugar (for holly leaves)
- Red mini candies (for holly berries — e.g. M&Ms or red pearls)
Instructions
- In a bowl, mix cake mix, eggs, oil, and vanilla. Add green food coloring until you reach the bright Grinch-green.
- Form 1 tbsp-sized balls and roll them lightly in powdered sugar for the crackle effect.
- Place on a baking sheet and bake at 180°C (350°F) for 8–10 minutes. Cookies should stay soft and slightly underbaked in the center.
- While still warm, gently press green sugar to form holly leaf shapes and 3 red mini candies in the center for berries.
- Let them set for 15 minutes before storing or boxing.
Notes
- Ensure not to overbake for the best chewy texture.
- Adjust the amount of green food coloring to achieve your desired shade.
- These cookies can be stored in an airtight container for up to a week.
