Ingredients
- Tri tip roast
- Santa Maria seasoning
- Olive oil
- Garlic
- Kosher salt
- Cracked black pepper
- Paprika
- Onion powder
- Fresh parsley
- Chopped tomatoes
- Green onions
- Red wine vinegar (optional for topping)
Instructions
- Pat tri tip dry and rub all over with olive oil and garlic.
- Season generously with Santa Maria seasoning.
- Smoke on Traeger at 225°F until internal temp reaches ~125°F.
- Increase heat to 450°F and sear until crust forms.
- Remove and rest meat 10–15 minutes.
- Slice thinly against the grain.
- Top with chopped tomato, green onion, parsley, and a light vinegar splash if desired.
