Ingredients

  • 2 large poblano peppers
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • Juice of 1 fresh lime
  • 1 clove garlic
  • 2 tbsp fresh cilantro
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • Pinch red pepper flakes (optional)

Instructions

  1. Roast poblano peppers over medium heat (stovetop or broiler) until blistered and charred.
  2. Place in a covered bowl for 5 minutes, then peel off skins and remove seeds.
  3. Add roasted poblanos, sour cream, mayonnaise, lime juice, garlic, and cilantro to a blender.
  4. Blend until smooth and creamy.
  5. Slowly drizzle in olive oil while blending for extra silkiness.
  6. Season with salt, pepper, and red pepper flakes to taste.
  7. Chill 10 minutes before serving for best flavor.
