Description

Tender beef simmered in a rich, spiced tomato gravy with deep, comforting flavor.


Ingredients

Scale
  • 2 lbs beef chuck (cubed)
  • 1 cup crushed tomatoes
  • 1 cup full-fat coconut milk
  • 2 tbsp curry powder or garam masala
  • 1 onion (finely diced)
  • 3 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 1 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp paprika
  • ½ tsp turmeric
  • 1 cup beef broth
  • Salt & black pepper
  • Fresh cilantro (garnish)

Instructions

  1. Season beef cubes with salt and pepper; optionally sear in a hot pan for deeper flavor.
  2. Place onion, garlic, ginger, crushed tomatoes, tomato paste, spices, coconut milk, and broth into the slow cooker. Stir to combine.
  3. Add beef cubes and coat well in the sauce.
  4. Cook on Low for 8 hours or High for 4–5 hours until beef is fork-tender.
  5. Remove lid for the last 20–30 minutes if you prefer a thicker sauce.
  6. Adjust seasoning and finish with freshly chopped cilantro.
  7. Serve hot with naan or steamed rice.

Notes

  • For a spicier curry, add chili powder or fresh chilies.
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • This dish can be frozen for up to 3 months.
