Ingredients

- 2 lbs beef chuck (cubed)
- 1 cup crushed tomatoes
- 1 cup full-fat coconut milk
- 2 tbsp curry powder or garam masala
- 1 onion (finely diced)
- 3 cloves garlic (minced)
- 1 tbsp fresh ginger (grated)
- 1 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp paprika
- ½ tsp turmeric
- 1 cup beef broth
- Salt & black pepper
- Fresh cilantro (garnish)
Instructions
- Season beef cubes with salt and pepper; optionally sear in a hot pan for deeper flavor.
- Place onion, garlic, ginger, crushed tomatoes, tomato paste, spices, coconut milk, and broth into the slow cooker. Stir to combine.
- Add beef cubes and coat well in the sauce.
- Cook on Low for 8 hours or High for 4–5 hours until beef is fork-tender.
- Remove lid for the last 20–30 minutes if you prefer a thicker sauce.
- Adjust seasoning and finish with freshly chopped cilantro.
- Serve hot with naan or steamed rice.
Notes
- For a spicier curry, add chili powder or fresh chilies.
- Leftovers can be stored in the refrigerator for up to 3 days.
- This dish can be frozen for up to 3 months.
