Description

A rich, spiced pumpkin custard with a crackly caramelized sugar top—perfect make-ahead fall elegance.


Ingredients

Scale
  • 2 cups Heavy cream
  • 1 cup Pumpkin purée
  • 6 Egg yolks
  • 3/4 cup Granulated sugar
  • 1 tsp Vanilla extract
  • 1 tsp Pumpkin pie spice (or cinnamon + nutmeg)
  • 1/4 tsp Salt
  • Extra sugar (for brûlée topping)

Instructions

  1. Heat cream gently until steaming; do not boil.
  2. Whisk egg yolks and sugar until pale and smooth.
  3. Whisk in pumpkin purée, vanilla, spices, and salt.
  4. Slowly temper warm cream into the pumpkin mixture.
  5. Strain, then pour into ramekins set in a water bath.
  6. Bake until edges are set and centers slightly jiggly, 30–35 minutes.
  7. Chill completely, sprinkle sugar on top, torch until glassy and caramelized.

Notes

  • Make sure to chill the custards for at least 2 hours before serving.
  • Use a kitchen torch for the best caramelized sugar topping.
  • Can be made a day in advance for convenience.
