Ingredients

- 2 cups Heavy cream
- 1 cup Pumpkin purée
- 6 Egg yolks
- 3/4 cup Granulated sugar
- 1 tsp Vanilla extract
- 1 tsp Pumpkin pie spice (or cinnamon + nutmeg)
- 1/4 tsp Salt
- Extra sugar (for brûlée topping)
Instructions
- Heat cream gently until steaming; do not boil.
- Whisk egg yolks and sugar until pale and smooth.
- Whisk in pumpkin purée, vanilla, spices, and salt.
- Slowly temper warm cream into the pumpkin mixture.
- Strain, then pour into ramekins set in a water bath.
- Bake until edges are set and centers slightly jiggly, 30–35 minutes.
- Chill completely, sprinkle sugar on top, torch until glassy and caramelized.
Notes
- Make sure to chill the custards for at least 2 hours before serving.
- Use a kitchen torch for the best caramelized sugar topping.
- Can be made a day in advance for convenience.
