Ingredients

  • 68 garlic cloves
  • 2 tbsp fresh lemon juice
  • 1 egg white (room temperature)
  • ½ tsp salt
  • 12 tbsp cold water (if needed for texture)
  • Extra lemon zest (optional)
  • Drizzle of olive oil for garnish

Instructions

  1. Add garlic and salt to a food processor; blend until very smooth and paste-like.
  2. Add the egg white and blend again until fluffy.
  3. With the processor running, slowly drizzle in the oil in a thin stream to emulsify.
  4. Once thickened, drizzle in lemon juice gradually while blending.
  5. Continue blending until the sauce becomes thick, bright white, and airy.
  6. Adjust salt or lemon to taste and swirl into a bowl. Finish with olive oil and cracked pepper.
