Ingredients

- 1 cup neutral oil (grapeseed or sunflower)
- 6–8 garlic cloves
- 2 tbsp fresh lemon juice
- 1 egg white (room temperature)
- ½ tsp salt
- 1–2 tbsp cold water (if needed for texture)
- Extra lemon zest (optional)
- Drizzle of olive oil for garnish
Instructions
- Add garlic and salt to a food processor; blend until very smooth and paste-like.
- Add the egg white and blend again until fluffy.
- With the processor running, slowly drizzle in the oil in a thin stream to emulsify.
- Once thickened, drizzle in lemon juice gradually while blending.
- Continue blending until the sauce becomes thick, bright white, and airy.
- Adjust salt or lemon to taste and swirl into a bowl. Finish with olive oil and cracked pepper.

- Adjust the amount of garlic based on your preference for garlic flavor.
