Instructions
- Slowly braise short ribs until fork-tender; shred and reserve juices.
- Simmer cream, butter, garlic, and smoked gouda until smooth and silky.
- Preheat oven to 475°F with a pizza stone or steel inside.
- Stretch dough and brush lightly with olive oil.
- Spread gouda cream sauce evenly over the crust.
- Top with mozzarella, shredded short ribs, and red onion.
- Bake 12–15 minutes until bubbling and golden; finish with herbs and optional balsamic drizzle.
Notes
- For best results, braise the short ribs the day before and let them cool in their juices.
