Ingredients

  • 1 Plant-based roast (seitan or mushroom-based)
  • 4 Yellow onions
  • 2 cups Vegetable broth
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 2 tablespoons Soy sauce or tamari
  • 1 teaspoon Fresh thyme
  • 1 Bay leaf
  • 1/2 teaspoon Black pepper
  • 1 tablespoon Cornstarch (for thickening)
  • Mashed potatoes (for serving)

Instructions

  1. Slice onions thinly and caramelize slowly in olive oil until deep golden.
  2. Add garlic and cook until fragrant.
  3. Deglaze with a splash of broth, scraping up browned bits.
  4. Nestle plant-based roast into the onions.
  5. Add remaining broth, soy sauce, thyme, and bay leaf.
  6. Cover and bake for 90 minutes, basting occasionally.
  7. Thicken sauce if needed, remove bay leaf, and serve over mashed potatoes.
