Ingredients

- 1 Plant-based roast (seitan or mushroom-based)
- 4 Yellow onions
- 2 cups Vegetable broth
- 2 tablespoons Olive oil
- 3 cloves Garlic, minced
- 2 tablespoons Soy sauce or tamari
- 1 teaspoon Fresh thyme
- 1 Bay leaf
- 1/2 teaspoon Black pepper
- 1 tablespoon Cornstarch (for thickening)
- Mashed potatoes (for serving)
Instructions
- Slice onions thinly and caramelize slowly in olive oil until deep golden.
- Add garlic and cook until fragrant.
- Deglaze with a splash of broth, scraping up browned bits.
- Nestle plant-based roast into the onions.
- Add remaining broth, soy sauce, thyme, and bay leaf.
- Cover and bake for 90 minutes, basting occasionally.
- Thicken sauce if needed, remove bay leaf, and serve over mashed potatoes.
Notes
- For a gluten-free option, use gluten-free soy sauce or tamari.
- Adjust the seasoning to taste before serving.
