- 4 large Eggs
- 1 cup Milk
- 1 cup All-purpose flour
- 1 cup Sharp cheddar cheese, shredded
- 1/2 cup Cooked bacon, crumbled
- 2 tablespoons Butter
- Fresh parsley, for garnish
- Salt & pepper, to taste
Instructions
- Preheat oven to 425°F (220°C). Place a cast iron skillet inside to heat.
- In a blender, mix eggs, milk, flour, salt, and pepper until smooth and frothy.
- Carefully remove the hot skillet, add butter, and swirl until melted.
- Pour in the batter immediately, then sprinkle with cheddar and crumbled bacon.
- Bake for 20–22 minutes until puffed and golden brown around the edges.
- Sprinkle with fresh parsley and a little more cheese while hot.
- Slice and serve straight from the skillet while the center is gooey and melty.
Notes
- For a spicier version, add some diced jalapeños to the batter.
- Serve with a side of fresh fruit for a balanced breakfast.
