Description

A golden, puffed skillet pancake baked with smoky bacon and melted cheddar — crispy edges and cheesy comfort in every bite.


Ingredients

Scale
  • 4 large Eggs
  • 1 cup Milk
  • 1 cup All-purpose flour
  • 1 cup Sharp cheddar cheese, shredded
  • 1/2 cup Cooked bacon, crumbled
  • 2 tablespoons Butter
  • Fresh parsley, for garnish
  • Salt & pepper, to taste

Instructions

  1. Preheat oven to 425°F (220°C). Place a cast iron skillet inside to heat.
  2. In a blender, mix eggs, milk, flour, salt, and pepper until smooth and frothy.
  3. Carefully remove the hot skillet, add butter, and swirl until melted.
  4. Pour in the batter immediately, then sprinkle with cheddar and crumbled bacon.
  5. Bake for 20–22 minutes until puffed and golden brown around the edges.
  6. Sprinkle with fresh parsley and a little more cheese while hot.
  7. Slice and serve straight from the skillet while the center is gooey and melty.

Notes

  • For a spicier version, add some diced jalapeños to the batter.
  • Serve with a side of fresh fruit for a balanced breakfast.
