Instructions
- Preheat oven to 350°F (175°C).
- Melt butter and chocolate together, then whisk in sugar and eggs.
- Stir in flour to make brownie batter.
- Pour into a small round pan and bake for 20–25 minutes until set. Cool completely.
- Beat cream cheese until smooth, then add ½ cup caramel and vanilla.
- Whip heavy cream to stiff peaks and fold into caramel mixture for mousse.
- Spread mousse evenly over cooled brownie base, then chill for 2–3 hours until firm.
- Drizzle remaining caramel on top and sprinkle with sea salt.
- Garnish with chocolate curls or chunks before serving.
