Ingredients

  • Avocado (ripe)
  • Breadcrumbs or almond flour
  • 1 Egg
  • 2 cloves Garlic (minced)
  • 2 Green onions (chopped)
  • Zest of 1 Lemon
  • Juice of 1 Lemon
  • 2 tbsp Olive oil
  • 1/2 cup Greek yogurt or mayo
  • Fresh dill or parsley (to taste)
  • Salt & black pepper (to taste)

Instructions

  1. Mix salmon, breadcrumbs, egg, garlic, green onion, lemon zest, salt, and pepper.
  2. Shape mixture into evenly sized balls.
  3. Heat olive oil in a skillet over medium heat.
  4. Pan-fry salmon balls until golden and cooked through, turning gently.
  5. Blend avocado, yogurt (or mayo), lemon juice, olive oil, and herbs until smooth.
  6. Adjust seasoning on the sauce.
  7. Serve salmon balls warm with avocado sauce drizzled on top.
