- 4 Boneless skinless chicken breasts
- 8 oz Cream cheese
- 1 cup Mozzarella cheese
- 2 cups Fresh spinach
- 2 tbsp Olive oil or butter
- 2 cloves Garlic, minced
- 1 tsp Italian seasoning
- 1 tsp Paprika
- Salt & black pepper to taste
- Optional: cooked beef bacon bits (for topping)
Instructions
- Preheat oven to 190°C / 375°F and lightly grease a baking dish.
- Butterfly chicken breasts to create pockets; season inside and out with salt and pepper.
- Sauté spinach and garlic in olive oil or butter briefly until wilted; cool slightly.
- In a bowl, mix cream cheese, mozzarella, sautéed spinach, and Italian seasoning until smooth.
- Stuff chicken generously with the cheese mixture and secure if needed.
- Sear chicken in a hot skillet until golden on both sides.
- Transfer to the oven and bake for 25–30 minutes until cooked through and juicy.
Notes
- For added flavor, consider topping with cooked beef bacon bits before serving.
- Ensure chicken is cooked to an internal temperature of 75°C (165°F).
- Let the chicken rest for a few minutes before slicing to retain juices.
