Description
Rustic Greek Beef Stifado with Pearl Onions is a slow-braised beef dish in a rich tomato-red wine sauce infused with warm Mediterranean spices.

- 2 lbs Beef chuck, large cubes
- 1 cup Pearl onions
- 1 can (28 oz) Crushed tomatoes
- 1 cup Dry red wine
- 2 tbsp Olive oil
- 4 cloves Garlic, minced
- 2 Bay leaves
- 1 tsp Fresh thyme
- 1 Cinnamon stick
- 4 Whole cloves
- 2 tbsp Red wine vinegar
- Salt & black pepper to taste
Instructions
- Heat olive oil in a heavy pot and sear beef cubes on all sides until deeply browned. Remove and set aside.
- In the same pot, lightly sauté garlic until fragrant.
- Stir in crushed tomatoes, red wine, bay leaves, thyme, cinnamon stick, and a few whole cloves. Bring to a gentle simmer.
- Return beef to the pot, cover, and simmer slowly (or bake at 325°F) for about 2 hours until tender.
- Stir in peeled pearl onions and cook another 30–40 minutes until soft and glossy.
- Add a splash of red wine vinegar, adjust seasoning, and simmer briefly to meld flavors.
- Let the stew rest 10–15 minutes before serving for deeper flavor and thicker sauce.
