Description

Rustic Greek Beef Stifado with Pearl Onions is a slow-braised beef dish in a rich tomato-red wine sauce infused with warm Mediterranean spices.


Ingredients

  • 2 lbs Beef chuck, large cubes
  • 1 cup Pearl onions
  • 1 can (28 oz) Crushed tomatoes
  • 1 cup Dry red wine
  • 2 tbsp Olive oil
  • 4 cloves Garlic, minced
  • 2 Bay leaves
  • 1 tsp Fresh thyme
  • 1 Cinnamon stick
  • 4 Whole cloves
  • 2 tbsp Red wine vinegar
  • Salt & black pepper to taste

Instructions

  1. Heat olive oil in a heavy pot and sear beef cubes on all sides until deeply browned. Remove and set aside.
  2. In the same pot, lightly sauté garlic until fragrant.
  3. Stir in crushed tomatoes, red wine, bay leaves, thyme, cinnamon stick, and a few whole cloves. Bring to a gentle simmer.
  4. Return beef to the pot, cover, and simmer slowly (or bake at 325°F) for about 2 hours until tender.
  5. Stir in peeled pearl onions and cook another 30–40 minutes until soft and glossy.
  6. Add a splash of red wine vinegar, adjust seasoning, and simmer briefly to meld flavors.
  7. Let the stew rest 10–15 minutes before serving for deeper flavor and thicker sauce.
