- 1 cup shredded mozzarella cheese
- 1/2 cup roasted red peppers (sliced)
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- Toothpicks or kitchen twine
Instructions
- Preheat oven to 400°F.
- Slice a pocket into each chicken breast without cutting through.
- Sauté spinach until wilted and let cool slightly.
- Stuff each chicken breast with mozzarella, spinach, and roasted red peppers. Secure with toothpicks.
- Brush chicken with olive oil and season with garlic powder, Italian seasoning, salt, and pepper.
- Sear in a skillet for 2–3 minutes per side until golden brown.
- Transfer to oven and roast for 20–25 minutes, until fully cooked.
- Let rest for 5 minutes before slicing — serve with pan juices drizzled on top.
