Description

Ingredients

  • 1 cup fresh spinach (sautéed)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup roasted red peppers (sliced)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • Toothpicks or kitchen twine

Instructions

  1. Preheat oven to 400°F.
  2. Slice a pocket into each chicken breast without cutting through.
  3. Sauté spinach until wilted and let cool slightly.
  4. Stuff each chicken breast with mozzarella, spinach, and roasted red peppers. Secure with toothpicks.
  5. Brush chicken with olive oil and season with garlic powder, Italian seasoning, salt, and pepper.
  6. Sear in a skillet for 2–3 minutes per side until golden brown.
