- 4 Boneless skinless chicken breasts
- 8 oz Fresh mozzarella (sliced or shredded)
- 1 cup Roasted red peppers (sliced)
- 2 cups Fresh spinach
- 2 tbsp Olive oil
- 2 cloves Garlic (minced)
- 1 tsp Italian seasoning
- 1 tsp Paprika
- Salt & black pepper to taste
- Fresh parsley (for garnish)
Instructions
- Preheat oven to 400°F (205°C).
- Slice a pocket into each chicken breast and season inside and out.
- Sauté spinach with garlic until just wilted; cool slightly.
- Stuff chicken with spinach, roasted red peppers, and mozzarella.
- Secure with toothpicks if needed and rub outside with olive oil and spices.
- Bake until chicken is golden and cooked through.
- Rest briefly, remove toothpicks, garnish, and serve.
Notes
- Ensure chicken is cooked to an internal temperature of 165°F (75°C).
- Feel free to add other vegetables to the stuffing if desired.
- Leftovers can be stored in the refrigerator for up to 3 days.
