Description

Juicy baked chicken breasts stuffed with melty mozzarella, garlicky spinach, and sweet roasted red peppers.


Ingredients

Scale
  • 4 Boneless skinless chicken breasts
  • 8 oz Fresh mozzarella (sliced or shredded)
  • 1 cup Roasted red peppers (sliced)
  • 2 cups Fresh spinach
  • 2 tbsp Olive oil
  • 2 cloves Garlic (minced)
  • 1 tsp Italian seasoning
  • 1 tsp Paprika
  • Salt & black pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Preheat oven to 400°F (205°C).
  2. Slice a pocket into each chicken breast and season inside and out.
  3. Sauté spinach with garlic until just wilted; cool slightly.
  4. Stuff chicken with spinach, roasted red peppers, and mozzarella.
  5. Secure with toothpicks if needed and rub outside with olive oil and spices.
  6. Bake until chicken is golden and cooked through.
  7. Rest briefly, remove toothpicks, garnish, and serve.

Notes

  • Ensure chicken is cooked to an internal temperature of 165°F (75°C).
  • Feel free to add other vegetables to the stuffing if desired.
  • Leftovers can be stored in the refrigerator for up to 3 days.
