Ingredients
- Baby or Yukon gold potatoes
- Feta cheese (cubed)
- Garlic cloves (minced)
- Olive oil
- Fresh thyme or rosemary
- Salt and pepper
- Lemon zest (optional)
- Fresh parsley (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Halve potatoes and toss with olive oil, garlic, salt, and pepper.
- Spread potatoes on a baking tray, cut side down, and roast for 30 minutes until golden and crisp.
- Add feta cubes and thyme sprigs over potatoes.
- Return to oven for 10–15 minutes until feta softens and edges brown slightly.
- Sprinkle with lemon zest for brightness.
- Transfer to a serving dish and drizzle with a little extra olive oil.
- Garnish with chopped parsley and serve hot.
