Ingredients

  • Baby or Yukon gold potatoes
  • Feta cheese (cubed)
  • Garlic cloves (minced)

  • Salt and pepper
  • Lemon zest (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Halve potatoes and toss with olive oil, garlic, salt, and pepper.
  2. Spread potatoes on a baking tray, cut side down, and roast for 30 minutes until golden and crisp.
  3. Add feta cubes and thyme sprigs over potatoes.
