Ingredients
- Baby potatoes, halved
- Feta cheese, cubed
- Fresh thyme sprigs
- Garlic cloves, minced
- Olive oil
- Sea salt & black pepper
- Lemon zest
- Crushed red pepper flakes (optional)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss halved baby potatoes with olive oil, minced garlic, salt, and pepper.
- Roast cut side down for 30–35 minutes until crisp and golden.
- Sprinkle fresh thyme and roast for another 5 minutes to infuse aroma.
- Remove from oven and top immediately with feta cubes and lemon zest.
- Garnish with extra thyme and a pinch of red pepper flakes if desired.
- Serve warm — perfect as a side or snack.
