Description

Crispy golden potatoes topped with creamy feta and fragrant thyme — pure rustic perfection.


Ingredients

  • Baby potatoes, halved
  • Feta cheese, cubed
  • Fresh thyme sprigs
  • Garlic cloves, minced
  • Olive oil
  • Sea salt & black pepper
  • Lemon zest
  • Crushed red pepper flakes (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss halved baby potatoes with olive oil, minced garlic, salt, and pepper.
  3. Roast cut side down for 30–35 minutes until crisp and golden.
  4. Sprinkle fresh thyme and roast for another 5 minutes to infuse aroma.
  5. Remove from oven and top immediately with feta cubes and lemon zest.
  6. Garnish with extra thyme and a pinch of red pepper flakes if desired.
  7. Serve warm — perfect as a side or snack.
