Ingredients
- Whole carrots
- Ricotta cheese
- Hot honey
- Olive oil
- Salt & pepper
- Garlic powder
- Lemon zest
- Chili flakes
- Fresh herbs (parsley or thyme)
Instructions
- Toss carrots with olive oil, salt, pepper, and garlic powder; spread on a sheet pan.
- Roast at 425°F for 25–30 minutes until caramelized and tender.
- Meanwhile, whip ricotta with a bit of lemon zest, salt, and a drizzle of olive oil until creamy.
- Plate the roasted carrots and spoon a generous swirl of whipped ricotta on top.
- Drizzle hot honey over everything.
- Sprinkle chili flakes and herbs.
- Serve warm with extra hot honey on the side.

- Adjust the amount of hot honey based on your spice preference.
