Description

Ingredients

  • Whole carrots
  • Ricotta cheese
  • Hot honey
  • Olive oil
  • Salt & pepper
  • Garlic powder
  • Lemon zest
  • Chili flakes
  • Fresh herbs (parsley or thyme)

Instructions

  1. Toss carrots with olive oil, salt, pepper, and garlic powder; spread on a sheet pan.
  2. Roast at 425°F for 25–30 minutes until caramelized and tender.
  3. Meanwhile, whip ricotta with a bit of lemon zest, salt, and a drizzle of olive oil until creamy.
  4. Plate the roasted carrots and spoon a generous swirl of whipped ricotta on top.
  5. Drizzle hot honey over everything.
  6. Sprinkle chili flakes and herbs.
  7. Serve warm with extra hot honey on the side.
