Description

Raspberry-Filled Almond Snow Cookies are irresistible treats! Soft, buttery almond cookies rolled in powdered sugar with a bright, jammy raspberry center.

Ingredients

Scale
  • 1 cup almond flour
  • 1/2 cup unsalted butter
  • 1/2 cup raspberry jam (thick, seed-forward)
  • 1 cup powdered sugar
  • 1/2 cup all-purpose flour
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup granulated sugar
  • 1/2 tsp almond extract (optional for stronger almond flavor)

Instructions

  1. Cream butter, granulated sugar, vanilla, and almond extract until fluffy.
  2. Add almond flour, all-purpose flour, and salt; mix into a soft dough.
  3. Scoop dough balls, flatten slightly, and spoon a small amount of raspberry jam into the center.
  4. Fold dough around the filling to seal and roll into a smooth ball.
  5. Bake at 350°F for 12–14 minutes until the bottoms are lightly golden but tops stay pale.
  6. Let cool 5 minutes, then roll generously in powdered sugar.
  7. Serve once fully cooled and dust with extra sugar for a snowy finish.

Notes

  • Ensure the raspberry jam is thick and seed-forward for the best flavor.
  • For a stronger almond flavor, add almond extract.
  • Store cookies in an airtight container to maintain freshness.
