Description

A luxuriously rich, slow-simmered white meat sauce infused with herbs, wine, and cream—pure Italian comfort.

Ingredients

  • Ground beef
  • Ground pork
  • Pancetta
  • White wine
  • Olive oil
  • Onion
  • Carrot
  • Celery
  • Garlic

Instructions

  1. Heat olive oil in a heavy pot; render pancetta until golden and fragrant.
  2. Add finely diced onion, carrot, and celery; cook slowly until very soft.
  3. Stir in garlic, fennel seeds, rosemary, and sage until aromatic.
  4. Add ground beef and pork; cook gently, breaking up meat without browning hard.
  5. Deglaze with white wine and simmer until reduced.
  6. Add milk and chicken stock; cover and simmer very low until rich and silky.
  7. Finish with cream, lemon juice, and Parmesan; toss with pasta and serve.
