Ingredients
- Salmon fillets (cubed or flaked)
- Short pasta (rigatoni or penne)
- Fresh spinach
- Greek yogurt
- Garlic
- Olive oil
- Lemon zest
- Lemon juice
- Parmesan cheese
- Black pepper
- Salt
- Fresh dill or parsley
- Reserved pasta water
Instructions
- Cook pasta in salted water until al dente; reserve ½ cup pasta water.
- Season salmon with salt and pepper; sear in olive oil until just cooked, then set aside.
- In the same pan, sauté garlic until fragrant.
- Add spinach and cook until just wilted.
- Stir in Greek yogurt, lemon zest, lemon juice, and a splash of pasta water.
- Add pasta and salmon, gently folding to coat without breaking the fish.
- Finish with Parmesan, herbs, and extra black pepper before serving.
Notes
- For a spicier kick, add red pepper flakes.
- Can substitute Greek yogurt with sour cream if desired.
