Ingredients

  • Salmon fillets (cubed or flaked)
  • Short pasta (rigatoni or penne)
  • Fresh spinach
  • Greek yogurt
  • Garlic
  • Olive oil
  • Lemon zest
  • Lemon juice
  • Parmesan cheese
  • Black pepper
  • Salt
  • Fresh dill or parsley
  • Reserved pasta water

Instructions

  1. Cook pasta in salted water until al dente; reserve ½ cup pasta water.
  2. Season salmon with salt and pepper; sear in olive oil until just cooked, then set aside.
  3. In the same pan, sauté garlic until fragrant.
  4. Add spinach and cook until just wilted.
  5. Stir in Greek yogurt, lemon zest, lemon juice, and a splash of pasta water.
  6. Add pasta and salmon, gently folding to coat without breaking the fish.
  7. Finish with Parmesan, herbs, and extra black pepper before serving.
