Ingredients
- Boneless skinless chicken thighs
- Long-grain rice
- Smoked paprika
- Chicken broth
- Garlic
- Onion
- Red bell pepper
- Olive oil
- Tomato paste
- Cayenne pepper
- Heavy cream (optional for creamy finish)
- Salt & black pepper
- Fresh parsley or green onions
Instructions
- Season chicken with smoked paprika, salt, pepper, and a pinch of cayenne.
- Sear chicken in olive oil until golden and cooked through; remove and cube.
- In the same pan, sauté onion, garlic, and bell pepper until softened.
- Stir in rice and tomato paste; toast lightly for deeper flavor.
- Add chicken broth, bring to a simmer, cover, and cook until rice is tender.
- Fold in chicken and a splash of cream (optional), garnish with parsley or green onions, and serve hot.
Notes
- For a spicier dish, increase the amount of cayenne pepper.
