Instructions
- Heat a nonstick skillet or griddle over medium heat and melt a bit of butter.
- Sprinkle a pinch of brown sugar where each pancake will cook.
- Place a pineapple ring on top, then a cherry in the center.
- Pour pancake batter gently over the fruit, just enough to cover.
- Cook until bubbles form on the surface, then flip carefully and cook until golden.
- Repeat with remaining batter and fruit.
- Dust with powdered sugar and serve warm with maple syrup if desired.
