- 1/2 cup Brown sugar
- 1 1/2 cups Graham cracker crumbs
- 1/2 cup Butter
- 3 Eggs
- 1/2 cup Sugar
- 1 tsp Vanilla extract
- 1 cup Sour cream
- Maraschino cherries (for topping)
Instructions
- Heat brown sugar and butter in a skillet until melted and bubbling; add pineapple and cook until glossy and caramelized.
- Press graham crumbs mixed with melted butter into a springform pan to form a crust.
- Spread caramelized pineapple evenly over the crust and scatter cherries on top.
- Beat cream cheese with sugar until smooth; add eggs one at a time, then sour cream and vanilla.
- Pour batter gently over pineapple layer.
- Bake at 325°F in a water bath for 60–70 minutes until nearly set.
- Chill at least 4 hours, then slice to reveal the bright pineapple top.
