Ingredients

  • 1 tsp Baking soda
  • ½ tsp Salt
  • 2 Eggs
  • ½ cup Vegetable oil or melted butter
  • 1 tsp Vanilla extract
  • 1 cup Chocolate chips
  • Crushed peppermint candies (for topping)
  • Chocolate glaze or syrup (optional drizzle)

Instructions

  1. Preheat oven to 375°F and line a muffin tin.
  2. Whisk flour, cocoa powder, baking powder, baking soda, and salt in a bowl.
  3. In another bowl, mix sugars, eggs, milk, oil, vanilla, and peppermint extract.
  4. Fold dry ingredients into wet just until combined.
  5. Stir in chocolate chips gently.
  6. Divide batter into muffin cups and bake 18–22 minutes until set.
  7. Cool slightly, drizzle with chocolate glaze, and sprinkle crushed peppermint on top.
