- 2 cups Vanilla ice cream
- 1/2 cup Brown sugar

- 1 1/2 cups Flour

- Chocolate (for drizzle)
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Beat butter, peanut butter, and brown sugar until creamy; add egg and vanilla.
- Mix in flour, baking soda, and salt until dough forms.
- Shape dough into small balls, roll in crushed peanuts or cookie crumbs, and bake for 10–12 minutes.
- Cool completely, then sandwich vanilla ice cream between two cookies.
- Drizzle melted chocolate over the top.
- Freeze until firm before serving.

- Ensure cookies are completely cool before adding ice cream.
- For extra crunch, roll cookie dough balls in crushed peanuts.
