Ingredients

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Beat butter, peanut butter, and brown sugar until creamy; add egg and vanilla.
  3. Mix in flour, baking soda, and salt until dough forms.
  4. Shape dough into small balls, roll in crushed peanuts or cookie crumbs, and bake for 10–12 minutes.
  5. Cool completely, then sandwich vanilla ice cream between two cookies.
  6. Drizzle melted chocolate over the top.
  7. Freeze until firm before serving.
