Description
Classic peanut butter cookies hugged together with glossy jelly—nostalgic, sweet, and irresistibly soft.
Ingredients
Scale
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1/2 cup strawberry or grape jelly
- 1/2 cup unsalted butter
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter, peanut butter, and sugar until smooth and fluffy.
- Beat in the egg and vanilla extract until fully combined.
- Mix in the flour, baking soda, and salt to form a soft dough.
- Scoop the dough, flatten slightly, and bake until lightly golden, about 10-12 minutes.
- Cool completely, then spread jelly on one cookie and sandwich with another.
Notes
- For a different flavor, try using almond butter instead of peanut butter.
- Ensure cookies are completely cool before adding jelly to prevent it from melting.
