Ingredients

  • 1 lb ground beef (or beef-pork mix)
  • 1 cup crushed tomatoes
  • 1 cup whole milk
  • 1 carrot, finely diced
  • 1 celery stalk, finely diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • ½ cup dry red wine
  • 2 tbsp olive oil
  • 1 tsp Italian herbs
  • Salt, pepper, and Parmesan to taste

Instructions

  1. Heat olive oil in a deep skillet; sauté onion, carrot, celery, and garlic until softened.
  2. Add ground meat and cook until browned, breaking it apart.
  3. Pour in wine to deglaze, simmer 2–3 minutes until reduced.
  4. Add crushed tomatoes, milk, herbs, salt, and pepper; simmer covered for 1½ hours, stirring occasionally.
  5. Cook pappardelle in salted water until al dente, then toss with the rich sauce.
  6. Sprinkle generously with freshly grated Parmesan.
  7. Serve warm with a drizzle of olive oil and extra cheese on top.
