- 1 lb ground beef (or beef-pork mix)
- 1 cup crushed tomatoes
- 1 cup whole milk
- 1 carrot, finely diced
- 1 celery stalk, finely diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- ½ cup dry red wine
- 2 tbsp olive oil
- 1 tsp Italian herbs
- Salt, pepper, and Parmesan to taste
Instructions
- Heat olive oil in a deep skillet; sauté onion, carrot, celery, and garlic until softened.
- Add ground meat and cook until browned, breaking it apart.
- Pour in wine to deglaze, simmer 2–3 minutes until reduced.
- Add crushed tomatoes, milk, herbs, salt, and pepper; simmer covered for 1½ hours, stirring occasionally.
- Cook pappardelle in salted water until al dente, then toss with the rich sauce.
- Sprinkle generously with freshly grated Parmesan.
- Serve warm with a drizzle of olive oil and extra cheese on top.

- For a richer flavor, use a mix of ground beef and pork.
