- 2 lbs Beef chuck
- 2 cups Red wine
- 8 oz Mushrooms
- 2 Carrots
- 1 Onion
- 3 cloves Garlic
- 4 cups Beef broth
- 2 tbsp Tomato paste
- 2 tbsp Olive oil
- 1 Bay leaf
- 1 tsp Dried thyme
- Salt & black pepper to taste
- Fresh parsley for garnish
Instructions
- Season beef generously and sear in olive oil until deeply browned; remove.
- Sauté onion and carrots in the same pot until softened and golden.
- Add garlic and tomato paste; cook until fragrant and darkened.
- Deglaze with red wine, scraping up browned bits.
- Add beef back with broth, mushrooms, bay leaf, and thyme.
- Cover and simmer until beef is fork-tender and sauce thickens.
- Finish with chopped parsley and serve hot.
Notes
- For best results, use a good quality red wine.
- Let the dish sit for a few minutes before serving to enhance flavors.
- Serve with crusty bread or over mashed potatoes for a complete meal.
