Ingredients

Scale
  • 2 lbs Beef chuck
  • 2 cups Red wine
  • 8 oz Mushrooms
  • 2 Carrots
  • 1 Onion
  • 3 cloves Garlic
  • 4 cups Beef broth
  • 2 tbsp Tomato paste
  • 2 tbsp Olive oil
  • 1 Bay leaf
  • 1 tsp Dried thyme
  • Salt & black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season beef generously and sear in olive oil until deeply browned; remove.
  2. Sauté onion and carrots in the same pot until softened and golden.
  3. Add garlic and tomato paste; cook until fragrant and darkened.
  4. Deglaze with red wine, scraping up browned bits.
  5. Add beef back with broth, mushrooms, bay leaf, and thyme.
  6. Cover and simmer until beef is fork-tender and sauce thickens.
  7. Finish with chopped parsley and serve hot.

  • Let the dish sit for a few minutes before serving to enhance flavors.
