Ingredients

- 2 Chicken breast
- 1 cup Long-grain rice
- 2 cups Broccoli florets
- 1 cup Cheddar cheese
- 1 Onion
- 2 cloves Garlic
- 2 cups Chicken broth
- 1/2 cup Milk or cream
- 2 tbsp Butter
- 2 tbsp Olive oil
- 1 tsp Paprika
- Salt to taste
- Black pepper to taste
Instructions
- Heat olive oil and butter in a large skillet; season and sear chicken until golden, then remove and slice.
- In the same pan, sauté onion and garlic until soft.
- Stir in rice, paprika, salt, and pepper; toast briefly.
- Add chicken broth and milk; bring to a gentle simmer.
- Cover and cook until rice is tender, stirring occasionally.
- Fold in broccoli and sliced chicken; cook until broccoli is tender.
- Sprinkle cheese over the top, cover, and melt until creamy and bubbly.
Notes
- For a spicier version, add red pepper flakes.
- Feel free to substitute other vegetables like bell peppers or carrots.
- Leftovers can be stored in the refrigerator for up to 3 days.
