Description

Creamy, cheesy comfort food made in a single pan—tender chicken, fluffy rice, and broccoli in every scoop.


Ingredients

Scale
  • 2 Chicken breast
  • 1 cup Long-grain rice
  • 2 cups Broccoli florets
  • 1 cup Cheddar cheese
  • 1 Onion
  • 2 cloves Garlic
  • 2 cups Chicken broth
  • 1/2 cup Milk or cream
  • 2 tbsp Butter
  • 2 tbsp Olive oil
  • 1 tsp Paprika
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil and butter in a large skillet; season and sear chicken until golden, then remove and slice.
  2. In the same pan, sauté onion and garlic until soft.
  3. Stir in rice, paprika, salt, and pepper; toast briefly.
  4. Add chicken broth and milk; bring to a gentle simmer.
  5. Cover and cook until rice is tender, stirring occasionally.
  6. Fold in broccoli and sliced chicken; cook until broccoli is tender.
  7. Sprinkle cheese over the top, cover, and melt until creamy and bubbly.

Notes

  • For a spicier version, add red pepper flakes.
  • Feel free to substitute other vegetables like bell peppers or carrots.
  • Leftovers can be stored in the refrigerator for up to 3 days.
