- 1 ½ cups chocolate cookie crumbs
- ¼ cup melted butter
- 12 oz cream cheese, softened
- ½ cup sugar
- 1 tsp vanilla extract
- ½ cup heavy cream
- ½ cup caramel sauce (plus extra for topping)
- ½ cup mini chocolate chips or chopped chocolate
Instructions
- Combine cookie crumbs and melted butter; press into the bottom of mini cheesecake molds or lined muffin tins. Chill for 15 minutes.
- Beat cream cheese and sugar until smooth. Add vanilla and heavy cream, whipping until fluffy.
- Spoon or pipe cheesecake mixture over crusts; smooth tops.
- Drizzle caramel sauce over each and sprinkle with chocolate bits.
- Chill for at least 3 hours or until firm.
- Lift out carefully and top with extra caramel and chopped candies before serving.
