Ingredients

  • 1 box brownie mix (plus ingredients on box)
  • 16 oz cream cheese, softened
  • 1 cup heavy whipping cream
  • 1 cup strawberry purée or jam
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 tbsp gelatin powder (bloomed in 2 tbsp water)
  • Whipped cream and chocolate drizzle for topping

Instructions

  1. Prepare and bake brownies in an 8×8 pan; cool completely.
  2. Beat cream cheese, sugar, and vanilla until smooth; spread over brownie base as the cheesecake layer. Chill 20 minutes.
  3. Whip cream to soft peaks, fold in strawberry purée and dissolved gelatin to make mousse.
  4. Spread mousse over cheesecake layer; chill for at least 3 hours or until firm.
  5. Top with whipped cream swirls and chocolate drizzle before slicing.
  6. Serve chilled for perfect, clean layers.
