- 1 box brownie mix (plus ingredients on box)
- 16 oz cream cheese, softened
- 1 cup heavy whipping cream
- 1 cup strawberry purée or jam
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 tbsp gelatin powder (bloomed in 2 tbsp water)
- Whipped cream and chocolate drizzle for topping
Instructions
- Prepare and bake brownies in an 8×8 pan; cool completely.
- Beat cream cheese, sugar, and vanilla until smooth; spread over brownie base as the cheesecake layer. Chill 20 minutes.
- Whip cream to soft peaks, fold in strawberry purée and dissolved gelatin to make mousse.
- Spread mousse over cheesecake layer; chill for at least 3 hours or until firm.
- Top with whipped cream swirls and chocolate drizzle before slicing.
- Serve chilled for perfect, clean layers.
Notes
- Ensure the brownies are completely cooled before adding the cheesecake layer.
- For best results, chill the dessert overnight.
- Use fresh strawberries for the purée for enhanced flavor.
