Ingredients

  • Cauliflower florets
  • Baby potatoes or sliced carrots

  • Sun-dried tomatoes
  • Bell peppers
  • Fresh spinach
  • Garlic
  • Olive oil
  • Italian seasoning
  • Red pepper flakes
  • Parmesan cheese
  • Salt & black pepper
  • Fresh basil

Instructions

  1. Toss cauliflower, potatoes (or carrots), and bell peppers with olive oil, salt, pepper, and Italian seasoning.
  2. Roast on a sheet pan for 20–25 minutes until golden and tender.
  3. In a skillet, sauté garlic in olive oil; stir in heavy cream, Parmesan, red pepper flakes, and chopped sun-dried tomatoes.
  4. Simmer until slightly thickened and creamy.
  5. Fold roasted vegetables and fresh spinach into the sauce; cook until spinach wilts.
  6. Garnish with fresh basil and extra Parmesan before serving.
