Ingredients
- Cauliflower florets
- Baby potatoes or sliced carrots
- Heavy cream
- Sun-dried tomatoes

Instructions
- Toss cauliflower, potatoes (or carrots), and bell peppers with olive oil, salt, pepper, and Italian seasoning.
- Roast on a sheet pan for 20–25 minutes until golden and tender.
- In a skillet, sauté garlic in olive oil; stir in heavy cream, Parmesan, red pepper flakes, and chopped sun-dried tomatoes.
- Simmer until slightly thickened and creamy.
- Fold roasted vegetables and fresh spinach into the sauce; cook until spinach wilts.
