Ingredients
- Fresh asparagus
- Zucchini
- Yellow summer squash
- Olive oil
- Garlic (minced)
- Lemon zest & lemon juice
- Red pepper flakes
- Fresh parsley or thyme
- Salt
- Black pepper
- Optional grated Parmesan (for serving)
Instructions
- Trim asparagus and slice zucchini and squash into thick rounds.
- Toss vegetables with olive oil, salt, pepper, and red pepper flakes.
- Spread evenly on a baking sheet in a single layer.
- Roast until tender and lightly caramelized, tossing once halfway through.
- Add minced garlic for the final few minutes of roasting.
- Remove from oven and finish with lemon zest and juice.
- Garnish with fresh herbs and optional Parmesan before serving.
