Ingredients

  • Fresh asparagus
  • Zucchini
  • Yellow summer squash
  • Olive oil
  • Garlic (minced)
  • Lemon zest & lemon juice
  • Red pepper flakes
  • Fresh parsley or thyme
  • Salt
  • Black pepper
  • Optional grated Parmesan (for serving)

Instructions

  1. Trim asparagus and slice zucchini and squash into thick rounds.
  2. Toss vegetables with olive oil, salt, pepper, and red pepper flakes.
  3. Spread evenly on a baking sheet in a single layer.
  4. Roast until tender and lightly caramelized, tossing once halfway through.
  5. Add minced garlic for the final few minutes of roasting.
  6. Remove from oven and finish with lemon zest and juice.
  7. Garnish with fresh herbs and optional Parmesan before serving.

Notes

  • For best results, use fresh vegetables.
  • Adjust the amount of red pepper flakes to taste.
