Description

Bright, zesty lemon chicken with creamy feta folded into tender orzo—Mediterranean comfort made easy.


Ingredients

  • 4 Chicken thighs or breasts
  • 1 cup Orzo pasta
  • 1 Fresh lemon (juice + zest)
  • 1 cup Feta cheese
  • 2 tbsp Olive oil
  • 3 cloves Garlic (minced)
  • 1 Red bell pepper (sliced)
  • 2 cups Chicken broth
  • 1 tsp Dried oregano
  • 1 tsp Smoked paprika
  • Salt & black pepper to taste
  • Fresh parsley or thyme for garnish
  • Optional chili flakes

Instructions

  1. Season chicken with salt, pepper, oregano, paprika, lemon zest, and olive oil.
  2. Sear chicken in a large skillet until golden; remove and set aside.
  3. In the same skillet, sauté garlic and red peppers until fragrant and tender.
  4. Stir in orzo, coating it in the pan juices.
  5. Add chicken broth and lemon juice; bring to a gentle simmer.
  6. Nestle chicken back into the skillet and cook until orzo is tender and chicken is done.
  7. Finish with crumbled feta, fresh herbs, and a drizzle of olive oil.

Notes

  • For extra heat, add optional chili flakes.
