- 4 Chicken thighs or breasts
- 1 cup Orzo pasta
- 1 Fresh lemon (juice + zest)
- 1 cup Feta cheese
- 2 tbsp Olive oil
- 3 cloves Garlic (minced)
- 1 Red bell pepper (sliced)
- 2 cups Chicken broth
- 1 tsp Dried oregano
- 1 tsp Smoked paprika
- Salt & black pepper to taste
- Fresh parsley or thyme for garnish
- Optional chili flakes
Instructions
- Season chicken with salt, pepper, oregano, paprika, lemon zest, and olive oil.
- Sear chicken in a large skillet until golden; remove and set aside.
- In the same skillet, sauté garlic and red peppers until fragrant and tender.
- Stir in orzo, coating it in the pan juices.
- Add chicken broth and lemon juice; bring to a gentle simmer.
- Nestle chicken back into the skillet and cook until orzo is tender and chicken is done.
- Finish with crumbled feta, fresh herbs, and a drizzle of olive oil.

- For extra heat, add optional chili flakes.
