Ingredients
- All-purpose flour: 2½ cups (heat-treated for safety)
- Butter: 1½ cups (softened and divided)
- Brown sugar: 1 cup
- Chocolate chips: 1 cup (mini or regular)
- Cocoa powder: ¾ cup
- Sugar: 1 cup
- Eggs: 3 large
- Milk: 1 cup
- Baking powder: 2 tsp
- Vanilla extract: 2 tsp
- Heavy cream: ½ cup (for ganache)
- Semi-sweet chocolate: 8 oz (chopped for ganache)
Instructions
- Bake cake layers: Cream 1 cup butter and sugar; add eggs and vanilla. Mix in flour, cocoa, baking powder, and milk alternately. Divide into three pans and bake 25–30 minutes. Cool completely.
- Make cookie dough filling: Beat ½ cup butter with brown sugar until fluffy. Add heat-treated flour, vanilla, and fold in chocolate chips until smooth and thick.
- Layer the cake: Alternate chocolate cake layers with thick cookie dough filling, spreading evenly.
- Prepare ganache: Heat cream until steaming, pour over chopped chocolate, let sit 1 minute, then stir smooth.
- Frost the top: Spread ganache over the top layer for a glossy finish.
- Decorate: Add a swirl of ganache and a mini cookie or chocolate chips for garnish.
- Chill & serve: Refrigerate 30 minutes before slicing for neat, layered perfection.
Notes
- Ensure flour is heat-treated to eliminate any risk of raw flour.
- For a richer flavor, use high-quality cocoa powder and chocolate.
- Let the cake cool completely before layering to prevent melting the filling.
