- Salt & black pepper to taste
- 1 tablespoon Dijon mustard (optional)
- 1 tablespoon Butter
- Pan juices or light broth (for serving)
Instructions
- Preheat oven to 425°F (220°C). Pat pork tenderloin dry.
- Rub pork with olive oil, garlic, herbs, salt, pepper, and paprika.
- Sear pork in a hot oven-safe skillet until browned on all sides.
- Transfer skillet to oven and roast until internal temp reaches 145°F (63°C).
- Remove from oven, add a small knob of butter, and baste with pan juices.
- Rest pork for 5 minutes to retain juices.
- Slice thickly and spoon pan juices over the top before serving.
