Description

Ingredients

  • 1 Pork tenderloin
  • 2 tablespoons Olive oil
  • 4 cloves Garlic (minced)
  • 1 tablespoon Fresh rosemary or thyme
  • 1 teaspoon Paprika
  • Salt & black pepper to taste
  • 1 tablespoon Dijon mustard (optional)
  • 1 tablespoon Butter
  • Pan juices or light broth (for serving)

Instructions

  1. Preheat oven to 425°F (220°C). Pat pork tenderloin dry.
  2. Rub pork with olive oil, garlic, herbs, salt, pepper, and paprika.
  3. Sear pork in a hot oven-safe skillet until browned on all sides.
  4. Transfer skillet to oven and roast until internal temp reaches 145°F (63°C).
  5. Remove from oven, add a small knob of butter, and baste with pan juices.
  6. Rest pork for 5 minutes to retain juices.
  7. Slice thickly and spoon pan juices over the top before serving.
