Ingredients

- Ground beef or lamb
- Fresh lemon juice & zest
- 1 Egg
- Olive oil
- 1 Onion (grated)
- 2 Garlic cloves (minced)
- Fresh parsley
- 1 cup Breadcrumbs
- 1 cup Chicken broth
- 2 tbsp Butter
- 2 tbsp Flour
- Salt & black pepper to taste
- 1 tsp Dried oregano
Instructions
- In a bowl, mix ground meat, egg, breadcrumbs, grated onion, garlic, parsley, oregano, salt, and pepper.
- Roll into evenly sized meatballs.
- Sear meatballs in olive oil until browned on all sides; remove and set aside.
- In the same pan, melt butter and whisk in flour to form a light roux.
- Slowly add chicken broth and lemon juice, stirring until smooth and slightly thickened.
- Return meatballs to the pan and simmer gently until cooked through and tender.
- Finish with lemon zest and extra parsley; spoon sauce over meatballs to serve.
Notes
- For a richer flavor, use a mix of beef and lamb.
- Adjust the amount of lemon juice to taste for desired tanginess.
- Serve with rice or a fresh salad for a complete meal.
