Description

Ultra-tender Greek-style meatballs simmered in a silky, zesty lemon sauce that tastes like sunshine.


Ingredients

Scale
  • Ground beef or lamb
  • Fresh lemon juice & zest
  • 1 Egg
  • Olive oil
  • 1 Onion (grated)
  • 2 Garlic cloves (minced)
  • Fresh parsley
  • 1 cup Breadcrumbs
  • 1 cup Chicken broth
  • 2 tbsp Butter
  • 2 tbsp Flour
  • Salt & black pepper to taste
  • 1 tsp Dried oregano

Instructions

  1. In a bowl, mix ground meat, egg, breadcrumbs, grated onion, garlic, parsley, oregano, salt, and pepper.
  2. Roll into evenly sized meatballs.
  3. Sear meatballs in olive oil until browned on all sides; remove and set aside.
  4. In the same pan, melt butter and whisk in flour to form a light roux.
  5. Slowly add chicken broth and lemon juice, stirring until smooth and slightly thickened.
  6. Return meatballs to the pan and simmer gently until cooked through and tender.
  7. Finish with lemon zest and extra parsley; spoon sauce over meatballs to serve.

  • For a richer flavor, use a mix of beef and lamb.
  • Adjust the amount of lemon juice to taste for desired tanginess.
