Ingredients

  • 1/4 cup Olive oil
  • 1/4 cup Fresh lemon juice
  • 3 cloves Garlic (minced)
  • 1 tsp Dried oregano
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • Fresh parsley or oregano (for garnish)
  • Wooden skewers (soaked)
  • Tzatziki (for serving)
  • Pita (for serving)
  • Lemon wedges (for serving)

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
  2. Add chicken cubes to the marinade and toss to coat; marinate for at least 1 hour (up to overnight).
  3. Thread the marinated chicken onto soaked skewers.
  4. Preheat the grill or grill pan to medium-high and lightly oil it.
  5. Grill the skewers, turning occasionally, until charred and cooked through, about 12–15 minutes.
  6. Let the skewers rest for 2–3 minutes, then garnish with fresh herbs and lemon.
  7. Serve hot with pita and tzatziki.
