Ingredients

- 1 lb Italian sausage (mild or hot)
- 15 oz Ricotta cheese
- 2 cups Shredded mozzarella
- 12 Cannelloni pasta tubes
- 2 cups Marinara sauce
- 1/2 cup Parmesan cheese
- 2 cloves Garlic, minced
- 1 small Onion, chopped
- 2 tbsp Parsley, chopped
- 2 tbsp Olive oil
Instructions
- Sauté onion and garlic in olive oil until fragrant.
- Add Italian sausage and cook until browned; let cool slightly.
- In a bowl, mix ricotta, mozzarella, Parmesan, parsley, and the cooked sausage to create a filling.
- Spoon the filling into uncooked cannelloni tubes, packing tightly.
- Spread a layer of marinara sauce in a baking dish and arrange the stuffed cannelloni on top.
- Cover with more marinara sauce and sprinkle with additional mozzarella and Parmesan.
- Bake at 375°F (190°C) for 30–35 minutes until bubbling and golden.
- Let rest for 5 minutes before serving for cleaner slices.
Notes
- For a spicier version, use hot Italian sausage.
- Feel free to add vegetables like spinach or mushrooms to the filling.
- Can be made ahead and stored in the refrigerator before baking.
