- 1 tsp Italian seasoning

- Optional: 1/2 cup red wine

Instructions
- Heat olive oil in a large pot; sauté onion, carrots, and garlic until softened.
- Add ground beef and cook until browned, breaking into small pieces.
- Stir in tomato paste and cook for 1–2 minutes to deepen the flavor.
- Pour in crushed tomatoes, broth, and optional red wine; season with herbs, salt, and pepper.
- Reduce heat and simmer uncovered for 1–2 hours, stirring occasionally for rich thickness.
- Taste and adjust seasoning; simmer longer for deeper flavor.
- Serve over wide noodles like pappardelle and finish with parmesan.
