Juicy, herb-marinated chicken finished with bright lemon and creamy feta in true Mediterranean style.
Ingredients

- 4 thin-cut chicken breasts
- Juice and zest of 1 fresh lemon
- 1/4 cup extra virgin olive oil
- 1/2 cup feta cheese, crumbled
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 2 tbsp fresh parsley, chopped
- 1 tsp smoked paprika
- Coarse black pepper, to taste
- Sea salt, to taste
- Lemon wedges, for serving
Instructions
- Whisk together olive oil, lemon juice, lemon zest, garlic, oregano, paprika, salt, and pepper in a bowl.
- Coat the chicken breasts thoroughly with the marinade and let marinate for at least 20 minutes.
- Arrange the marinated chicken in a baking dish and pour the remaining marinade over the top.
- Bake in a preheated oven at 400°F (200°C) until the chicken is golden and cooked through, about 30-35 minutes.
- Remove from the oven and sprinkle generously with crumbled feta cheese.
- Return to the oven briefly until the feta softens, about 5 minutes.
- Finish with chopped parsley and serve with lemon wedges.
Notes
- For best flavor, marinate the chicken for longer if possible.
- Serve with a side of roasted vegetables or a Greek salad for a complete meal.
- Adjust the amount of feta cheese according to your preference.
