Description

Juicy, herb-marinated chicken finished with bright lemon and creamy feta in true Mediterranean style.


Ingredients

  • 4 thin-cut chicken breasts
  • Juice and zest of 1 fresh lemon
  • 1/4 cup extra virgin olive oil
  • 1/2 cup feta cheese, crumbled
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 2 tbsp fresh parsley, chopped
  • 1 tsp smoked paprika
  • Coarse black pepper, to taste
  • Sea salt, to taste
  • Lemon wedges, for serving

Instructions

  1. Whisk together olive oil, lemon juice, lemon zest, garlic, oregano, paprika, salt, and pepper in a bowl.
  2. Coat the chicken breasts thoroughly with the marinade and let marinate for at least 20 minutes.
  3. Arrange the marinated chicken in a baking dish and pour the remaining marinade over the top.
  4. Bake in a preheated oven at 400°F (200°C) until the chicken is golden and cooked through, about 30-35 minutes.
  5. Remove from the oven and sprinkle generously with crumbled feta cheese.
  6. Return to the oven briefly until the feta softens, about 5 minutes.
  7. Finish with chopped parsley and serve with lemon wedges.
